Mark is a senior lecturer in food microbiology in the School of Agriculture and Food Sciences at the University of Queensland, Australia. He leads a research group working in areas of lactic acid bacteria genetics, genomics and applications and dairy sporeformer molecular diagnostics and has current research funding from the Australian Research Council and Dairy Innovation Australia. He teaches food microbiology, safety and biotechnology and is a member of the editorial board of the Journal of Food Protection.
